Recipe
Basic Batter for the Pancake:
4oz. /100g plain flour
pinch salt
1 egg
1/2 pint / 250 ml milk (or milk and water)
Sift flour and salt into a bowl, make a well in the centre and drop in the egg and liquid. Beat and gradually draw the flour into the liquid and beat until smooth.
Coat a thick frying pan with oil, heat and pour off any excess oil into a cup reserving for further coatings of the pan.
Add a generous tablespoon of the batter mix to the hot pan. Tilt the pan in all directions so that the batter forms a paper thin layer. Cook for barely a minute. Toss or turn and follow the instructions below for the surprise. (Cooking time may vary according to taste).
(This will make approximately 6-8 pancakes)
Now for the surprise: Once the pancake has been turned place a slice of strawberry & vanilla ice-cream onto one half of the pancake. Flip the other side of the pancake to form a half-circle. Cook for 1 minute. Place on a warmed plate and top with a generous pouring of “Crème de Cassis”. Your surprise is ready. Enjoy!
